  • 2 lb ground beef (80/20) Best for flavor and crust
  • Salt To taste
  • Black pepper To taste
  • 8 slices American or cheddar cheese
  • 8 pieces burger buns Cut for toasting

Method
 

Preparation
  1. Preheat the Blackstone to high (about 400–425°F) for 8–10 minutes.
  2. Divide the beef into 8 loose balls (don't pack them).
Cooking
  1. Place the balls on the hot griddle and smash once into thin patties. Season with salt and pepper. Cook for 2 minutes until a deep crust forms.
  2. Flip the patties, add cheese, and cook for an additional 1–2 minutes until melted and cooked through.
  3. Toast the buns cut-side down for 30–60 seconds on a cooler area.
Assembly
  1. Add the patties to the buns and top with your choice of toppings.
  2. Serve hot - Smash burgers are best enjoyed immediately.

Notes

Smash burgers are high in protein. You can lighten them up by using leaner beef or turkey, thin cheese, or serving in a lettuce wrap. For variations, try double smash burgers with cheese in the middle or adding jalapeños for a spicy kick.
