  • 1 pound boneless, skinless chicken breasts or thighs
  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 2 carrots, diced
  • 2 stalks celery, diced
  • 3 cloves garlic, minced
  • 8 cups chicken broth
  • 2 leaves bay leaves
  • 1 teaspoon dried thyme
  • 1 package (about 9 ounces) cheese tortellini, fresh or frozen
  • 1/4 cup chopped fresh parsley
  • Salt and freshly ground black pepper, to taste

Method

  1. Cut chicken into bite-sized pieces and season with salt and pepper.
  2. In a large pot, heat olive oil over medium heat and sauté onion, carrots, and celery for 5 minutes until tender.
  3. Add garlic and cook for 1 minute until fragrant.
  4. Pour in chicken broth, then add the chicken, bay leaves, and thyme.
  5. Bring to a boil, reduce heat, and simmer for 20 minutes until the chicken is cooked through and flavors meld.
  6. Stir in tortellini and cook 5–7 minutes (or per package directions) until tender.
  7. Remove bay leaves, season with salt and pepper, and stir in parsley.
  8. Serve hot, garnished with extra parsley if desired.

Notes

For extra flavor, consider adding a splash of lemon juice before serving. Feel free to add your favorite vegetables like spinach or kale for added nutrition. If you prefer a creamier soup, stir in some heavy cream or half-and-half just before serving.
