  • 4 cups vegetable broth Use low-sodium broth for a healthier option.
  • 2 cups chopped vegetables (carrots, celery, potatoes, etc.) Feel free to use any combination of fresh or frozen vegetables.
  • 1 cup diced tomatoes (canned or fresh) If using canned, drain the excess liquid.
  • 1 cup cooked beans or lentils Any canned beans will work; black beans or chickpeas are great choices.
  • 1 teaspoon dried herbs (thyme, rosemary, or basil) Herbs can be adjusted based on personal preference.
  • Salt and pepper to taste Use to enhance flavor.
  • Optional: cream or cheese for serving Can be omitted for a vegan version.

Preparation
  1. Place all ingredients into the Crockpot and stir to combine evenly.
Cooking
  1. Cover and cook on low for 6–8 hours or on high for 3–4 hours, until flavors are well blended and ingredients are tender.
Serving
  1. Before serving, adjust seasoning with salt and pepper, and stir in cream or cheese if desired. Serve warm and enjoy.

Notes

Store any leftovers in an airtight container for up to 4 days in the refrigerator or freeze for up to 3 months. Reheat before serving.
