Ingredients

  • 4 cups vegetable broth
  • 2 cups chopped vegetables (carrots, celery, potatoes, etc.) Feel free to mix and match your favorite vegetables.
  • 1 cup diced tomatoes (canned or fresh)
  • 1 cup cooked beans or lentils Any canned beans like black beans or chickpeas can be used.
  • 1 teaspoon dried herbs (thyme, rosemary, or basil)
  • Salt and pepper to taste Adjust seasoning as preferred.
  • Optional: cream or cheese for serving Use plant-based options for a vegan version.

Preparation
  1. Place all ingredients into the Crockpot and stir to combine evenly.
Cooking
  1. Cover and cook on low for 360 minutes (6 hours) to 480 minutes (8 hours) or on high for 180 minutes (3 hours) to 240 minutes (4 hours), until flavors are well blended and ingredients are tender.
Serving
  1. Before serving, adjust seasoning with salt and pepper, and stir in cream or cheese if desired. Serve warm and enjoy.

Notes

For a thicker consistency, blend a portion of the soup or add cornstarch mixed with water. Adding a splash of lemon juice or vinegar before serving can brighten the flavors.
