Ingredients
  

Meatloaf Ingredients
  • 2 pounds lean ground beef
  • 1 small finely diced onion
  • 1/2 cup finely diced bell pepper (optional) Optional ingredient for added flavor
  • 48 pieces Ritz crackers, crushed (about 1 1/2 sleeves)
  • 4 ounces shredded sharp cheddar or Colby cheese
  • 3 large eggs Large eggs preferred
  • 1/2 cup milk
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper
Topping Ingredients
  • 1/2-3/4 cup ketchup Adjust to taste
  • 2 tablespoons brown sugar
  • 1 teaspoon mustard

Method
 

Prepare Mixture & Topping
  1. Preheat oven to 350°F (175°C).
  2. In a small bowl, whisk together ketchup, brown sugar, and mustard for the topping; set aside.
  3. In a large bowl, combine eggs, crushed Ritz crackers, shredded cheese, milk, onion, bell pepper, salt, and black pepper.
  4. Add the ground beef and mix gently until just combined.
Shape & Bake
  1. Press the meat mixture into a greased and lined loaf pan.
  2. Bake for 30 minutes.
Add Topping & Finish
  1. Spread the prepared topping evenly over the partially baked meatloaf.
  2. Return to the oven for 30–40 minutes, or until the internal temperature reaches 155°F (68°C).
  3. Let rest for 15 minutes before slicing and serving.

Notes

To store leftovers, let the meatloaf cool completely. Wrap tightly in plastic wrap or foil, or place in an airtight container. Keep in the refrigerator for up to 3-4 days or freeze for up to 3 months. For extra flavor, consider adding garlic powder or Worcestershire sauce. Adjust ketchup amount for desired sweetness.
