  • 4 pieces boneless, skinless chicken breasts (about 1.5 lbs)
  • 3 cloves fresh garlic, minced
  • 1/2 cup low-sodium soy sauce
  • 1/4 cup packed light brown sugar
  • 1 can (10.5 oz) cream of chicken soup
  • Salt and pepper to taste
  • 2 tsp Italian seasoning
  • 2 tbsp unsalted butter
  • Fresh parsley (optional) For garnish

Method
 

Preparation
  1. Place the chicken breasts in the bottom of the crock pot.
  2. Sprinkle with minced garlic, salt, pepper, brown sugar, and Italian seasoning.
Cooking
  1. In a bowl, whisk together soy sauce and cream of chicken soup until smooth.
  2. Pour the mixture over the seasoned chicken, then cover and cook on low for 6–8 hours or high for 3–4 hours, until the chicken is tender.
Serving
  1. Shred the chicken with two forks and serve over rice or pasta, spooning the flavorful sauce on top.

Notes

For added flavor, marinate the chicken in soy sauce and garlic for a few hours before cooking. You can use chicken thighs instead of breasts for a juicier result. If you like a bit of spice, add red pepper flakes for some heat. Consider using a low-fat version of cream of chicken soup for a lighter option.
