- Peel and dice the potatoes, then place them in the crock pot.

Finishing
- Stir in heavy cream, season with salt and pepper, and blend with an immersion blender for a smoother texture if desired.

Notes
Leftover soup can be stored in an airtight container in the refrigerator for up to 3 days. Reheat on the stove or in the microwave, adding broth or cream if necessary. For extra flavor, consider adding garlic or onion. Using a variety of potatoes, like Yukon Gold, can enhance texture.
