  • 6 cups diced potatoes (peeled)
  • 1 cup shredded cheddar cheese
  • 1/2 cup cooked and crumbled bacon
  • 1 packet ranch seasoning mix
  • 4 cups chicken or vegetable broth
  • 1 cup heavy cream (or half-and-half)
Seasoning & Garnishes
  • Salt and pepper to taste
  • Optional garnishes: extra cheese, bacon bits, chopped green onions, or chives

Method
 

Preparation
  1. Peel and dice the potatoes, then place them in the crock pot.
  2. Sprinkle with ranch seasoning, add shredded cheese and crumbled bacon on top, and pour in the broth to cover everything.
Cooking
  1. Cover and cook on low for 7–8 hours or high for 4 hours, until the potatoes are tender.
Finishing
  1. Stir in heavy cream, season with salt and pepper, and blend with an immersion blender for a smoother texture if desired.
  2. Serve with extra cheese, bacon bits, or chopped green onions.

Notes

Leftover soup can be stored in an airtight container in the refrigerator for up to 3 days. Reheat on the stove or in the microwave, adding broth or cream if necessary. For extra flavor, consider adding garlic or onion. Using a variety of potatoes, like Yukon Gold, can enhance texture.
