  • 1.5 lbs boneless, skinless chicken breasts About 4 breasts
  • 4 cloves fresh garlic, minced
  • 4 cups low-sodium chicken broth
  • 8 oz cream cheese (full-fat)
  • 12 oz frozen cheese tortellini
  • 2 cups fresh spinach Or 1 cup frozen
  • 2 tsp dried Italian herbs (basil, oregano, thyme)
  • Salt and pepper to taste

Method
 

Preparation
  1. Dice the chicken into bite-sized pieces and mince the garlic.
  2. Add the chicken, garlic, chicken broth, cream cheese, and dried herbs to the crockpot. Stir to combine.
Cooking
  1. Cover and cook on low for 6 hours or high for 3 hours, until the chicken is fully cooked and tender.
Finishing & Serving
  1. About 30 minutes before serving, stir in the frozen tortellini and spinach.
  2. Season with salt and pepper to taste, then serve warm.

Notes

Serve warm in bowls, topped with extra cheese or freshly cracked pepper. Pairs well with crusty bread or a simple green salad. Store leftovers in an airtight container for up to 3 days in the refrigerator, or freeze for 2-3 months.
