  • 1.5 lbs 4 boneless, skinless chicken breasts
  • 4 cloves fresh garlic, minced
  • 4 cups low-sodium chicken broth Use low-sodium broth for better control over salt.
  • 8 oz cream cheese (full-fat)
  • 12 oz frozen cheese tortellini
  • 2 cups fresh spinach (or 1 cup frozen)
  • 2 tsp dried Italian herbs (basil, oregano, thyme)
  • Salt and pepper to taste

Method
 

Preparation
  1. Dice the chicken into bite-sized pieces and mince the garlic.
  2. Add the chicken, garlic, chicken broth, cream cheese, and dried herbs to the crockpot. Stir to combine.
Cooking
  1. Cover and cook on low for 6 hours or high for 3 hours, until the chicken is fully cooked and tender.
Finishing
  1. About 30 minutes before serving, stir in the frozen tortellini and spinach.
  2. Season with salt and pepper to taste, then serve warm.

Notes

Serve warm in bowls. Top with extra cheese or cracked pepper for added flavor. Pairs well with crusty bread or a green salad. For extra flavor, consider adding chopped onions or bell peppers.
