Ingredients
  

For the meatballs
  • 1 lb ground beef
  • 1 cup breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup chopped fresh parsley
  • 1 egg
  • Salt to taste salt
  • Pepper to taste pepper
For cooking
  • 1 onion, thinly sliced
  • 2 cups beef broth
  • 1 cup French onion soup
  • Optional sliced cheese for topping Add cheese during the last 30 minutes of cooking.

Preparation
  1. In a large bowl, mix together the ground beef, breadcrumbs, Parmesan cheese, parsley, egg, salt, and pepper.
  2. Form the mixture into meatballs and set aside.
Cooking
  1. Place sliced onions in the bottom of the crockpot.
  2. Arrange the meatballs on top, then pour the combined beef broth and French onion soup over them.
  3. Cover and cook on low for 6–8 hours or high for 3–4 hours.
Serving
  1. If desired, top with sliced cheese during the last 30 minutes of cooking.
  2. Serve the meatballs warm with the onion and broth mixture.

Notes

Crockpot French Onion Meatballs can be served as a main dish with crusty bread, over rice or pasta, or in meatball subs. Leftovers can be stored in an airtight container for 3-4 days or frozen for up to 3 months. For more flavor, use fresh herbs and consider adding red pepper flakes for spice.
