Ingredients

Granola Base
  • 3/4 cup oats Can use rolled oats or quick oats.
  • 1/2 tsp cinnamon
  • 1/4 cup almond butter Can substitute with peanut butter or cashew butter.
  • 3-4 tbsp honey Adjust based on desired sweetness.
  • 1 tsp vanilla extract
Filling
  • 1 1/2 cups Greek yogurt Can use coconut yogurt for a dairy-free option.
  • Berries of choice Berries of choice to top Can substitute with other fruits like bananas or mango slices.

Method

Preparation
  1. In a bowl, mix oats, cinnamon, almond butter, honey, and vanilla extract until a sticky dough forms. If too dry, add a little more almond butter and honey.
Assembly
  1. Line a muffin pan with liners. Add a spoonful of the granola mixture to each cup and press firmly to form a solid base.
  2. Top with a spoonful of yogurt and fresh berries, adding any leftover granola on top.
Freezing
  1. Freeze for at least 4 hours until firm. Let thaw for a few minutes before serving for the best texture.

Notes

Store in an airtight container in the freezer for up to a month, separating layers with parchment paper to prevent sticking. Adjust sweetness with honey and experiment with different nut butters or add-ins for variety.
