  • 1.5 pounds beef bites or stew meat Alternative cuts like chuck roast or flank steak can be used.
  • 1 pound baby potatoes, halved
  • 1/2 cup unsalted butter Can substitute with other types of fat for a different flavor.
  • 4 cloves garlic, minced Fresh garlic preferred for best flavor.
  • Salt and pepper, to taste
  • 1 teaspoon dried thyme, optional Other herbs like rosemary or parsley can be used.
  • 1/2 cup beef broth Can substitute with chicken broth if desired.

Method
 

Preparation
  1. Add the beef bites and baby potatoes to the slow cooker.
  2. In a saucepan, melt butter over medium heat and sauté minced garlic for 1–2 minutes until fragrant.
Combine & Cook
  1. Pour the garlic butter over the beef and potatoes. Add salt, pepper, thyme, and beef broth, then stir to combine.
  2. Cover and cook on low for 6–8 hours, until the beef and potatoes are tender.
Finish & Serve
  1. Stir everything gently, then serve warm and enjoy your comforting garlic butter beef and potatoes.

Notes

Serve with a side salad or steamed vegetables for a complete meal. You can also soak up the garlic butter sauce with fresh bread.
