Ingredients
  

For the Peanut Butter Filling
  • 1 cup organic peanut butter Use smooth peanut butter for creamier texture.
  • 2 tablespoons honey or maple syrup (optional) Maple syrup can be used for a vegan option.
  • 1/2 teaspoon vanilla extract
For the Strawberries
  • 1 cup fresh strawberries, pureed Ensure puree is smooth for the best consistency.
For Coating
  • 1/4 cup cocoa powder Optional for rolling after freezing.

Method
 

Preparation
  1. In a bowl, combine peanut butter, honey or maple syrup (if using), and vanilla extract. Stir until the mixture is smooth and well blended.
Assemble the Layers
  1. Spoon a layer of peanut butter mixture into the bottom of each liner, then add a layer of strawberry purée, followed by another layer of peanut butter mixture on top.
Freeze & Finish
  1. Place the tin in the freezer for at least 1 hour until firm.
  2. Once set, remove from the liners and optionally roll in cocoa powder.
  3. Store in the fridge or freezer until ready to enjoy your peanut butter and strawberry cups.

Notes

Store in an airtight container in the fridge for up to a week, or in the freezer for up to a month. You can customize with your favorite nut butter or add a sprinkle of sea salt on top for a sweet and salty kick.
