Ingredients
  

For the Cake Layers
  • 225 g all-purpose flour
  • 1.5 teaspoons baking powder
  • 0.5 teaspoons salt
  • 3 large eggs (room temperature) Ensure room temperature for fluffiness.
  • 225 g granulated sugar Can be adjusted for sweetness.
  • 85 g unsalted butter Melted for batter.
  • 190 g milk (dairy or non-dairy) Use preferred type.
  • 2 tablespoons oil
  • 1.5 teaspoons vanilla extract
For the Whipped Cream Filling
  • 300 g whipping cream or heavy cream (cold) Keep cold until use.
  • 30 g powdered sugar Adjust based on sweetness preference.
  • 1 teaspoon vanilla extract
For Decoration
  • 1-2 teaspoons cocoa powder
  • 4 tablespoons strawberry jam Store-bought or homemade.
  • 2-3 pieces fresh strawberries (halved) Use ripe strawberries for best flavor.
  • 1 piece birthday candle With white and red stripes if possible.
  • 20 g dark chocolate (roughly chopped)

Method
 

Bake the Cake Layers
  1. Preheat oven to 180°C (350°F).
  2. In one bowl, mix flour, baking powder, and salt.
  3. In another bowl, whisk eggs and sugar until light and fluffy.
  4. Melt butter and combine it with milk, oil, and vanilla extract.
  5. Gently mix wet and dry ingredients until smooth.
  6. Pour the batter into lined cake pans.
  7. Bake for 25–30 minutes, or until a toothpick inserted into the center comes out clean.
  8. Let cool completely.
Prepare the Filling
  1. Beat cold whipping cream with powdered sugar and vanilla extract until soft peaks form.
  2. Keep chilled until ready to use.
Assemble & Decorate
  1. Place one cake layer on a plate, spread with strawberry jam, then add a layer of whipped cream.
  2. Top with the second cake layer, cover with more whipped cream.
  3. Decorate with cocoa powder, halved fresh strawberries, and chopped dark chocolate.
  4. Finish with a birthday candle on top and serve at room temperature.

Notes

Ensure your eggs are at room temperature for a fluffier cake. Don’t overmix the batter to keep the cake light and airy. Use fresh, ripe strawberries for the best flavor.
