Bake the Cake Layers
- Preheat oven to 180°C (350°F).
- In one bowl, mix flour, baking powder, and salt.
- In another bowl, whisk eggs and sugar until light and fluffy.
- Melt butter and combine it with milk, oil, and vanilla extract.
- Gently mix wet and dry ingredients until smooth.
- Pour the batter into lined cake pans.
- Bake for 25–30 minutes, or until a toothpick inserted into the center comes out clean.
- Let cool completely.
Prepare the Filling
- Beat cold whipping cream with powdered sugar and vanilla extract until soft peaks form.
- Keep chilled until ready to use.
Assemble & Decorate
- Place one cake layer on a plate, spread with strawberry jam, then add a layer of whipped cream.
- Top with the second cake layer, cover with more whipped cream.
- Decorate with cocoa powder, halved fresh strawberries, and chopped dark chocolate.
- Finish with a birthday candle on top and serve at room temperature.
Notes
Ensure your eggs are at room temperature for a fluffier cake. Don’t overmix the batter to keep the cake light and airy. Use fresh, ripe strawberries for the best flavor.
