Method
Cooking the Beef & Veggies
- In a large pot over medium-high heat, brown the ground beef, then drain excess grease.
- Add garlic, onion, and spices, cooking for 5 minutes until fragrant.
Building the Soup Base
- Stir in crushed tomatoes, chicken broth, water, and tomato paste.
- Break up the lasagna noodles, add them to the pot, bring to a boil, then reduce heat and simmer for 10 minutes.
Finishing & Serving
- Add spinach and heavy cream, cooking for 5 more minutes.
- Serve hot, topped with mozzarella, ricotta, and parmesan cheese.
Notes
Feel free to use ground turkey or chicken as a leaner alternative to beef. Customize the veggies by adding bell peppers, zucchini, or mushrooms.
