Main Ingredients
  • 2 pounds ground beef
  • 1 cup breadcrumbs
  • 1 egg
  • ½ cup milk
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 tablespoon olive oil
  • 8 slices provolone cheese (4 for filling, 4 for topping)
  • Fresh parsley, chopped

Method

Preparation
  1. Preheat oven to 375°F (190°C).
  2. In a skillet, heat olive oil over medium heat and sauté peppers and onions for about 5 minutes, until softened. Set aside to cool slightly.
Assembling the Meatloaf
  1. In a large bowl, combine ground beef, breadcrumbs, egg, milk, Worcestershire sauce, garlic powder, salt, and pepper.
  2. Press half of the meat mixture into a loaf pan, layer with 4 slices of provolone, then add the sautéed peppers and onions.
  3. Cover with the remaining meat, pressing to seal the edges.
Baking
  1. Bake for 45–50 minutes.
  2. In the last 5 minutes, place the remaining 4 slices of provolone on top and bake until melted.
  3. Let rest for 5–10 minutes, then garnish with parsley and serve warm.

Notes

For a spicier kick, add diced jalapeños or red pepper flakes to the meat mixture. Use a mix of ground beef and ground pork for added flavor and moisture. For a healthier option, substitute ground turkey or chicken. Customize the cheese too; try cheddar or a cheese blend for a different flavor profile.
