  • 1 lb Boneless Chicken Breasts/Thighs (Thighs for richer flavor, breasts for a leaner option.) Choose thighs for richer flavor.
  • 2 cups Corn (Fresh grilled, frozen, or canned corn.) Fresh or frozen corn can be used.
  • 4 oz Cream Cheese (Can use vegan alternatives like Tofutti or Kite Hill.) Consider vegan options.
  • 1/3 cup Cotija Cheese (Feta works as a substitute.) Feta can be used as an alternative.
  • 1 piece Lime (Lime Juice, freshly squeezed preferred.) Fresh lime juice recommended.
  • 2 cloves Garlic (Minced, jarred can be used.) Jarred minced garlic is acceptable.
  • 1/2 tsp Chili Powder (Chipotle or cayenne can be used for more heat.) Adjust for desired spiciness.
  • 1/2 tsp Smoked Paprika (Adds smokiness.) Enhances flavor with smokiness.
  • 1/2 tsp Onion Powder
  • to taste Fresh Cilantro (Optional.) For garnish.

Method
 

Preparation
  1. Start by placing the boneless chicken into the bottom of your slow cooker.
  2. Add the corn on top of the chicken.
  3. Soften the cream cheese in the microwave if necessary, and spread it over the corn and chicken.
  4. Sprinkle the Cotija cheese, and then add the lime juice, minced garlic, chili powder, smoked paprika, and onion powder.
Slow Cook
  1. Cover the slow cooker and cook on low for about 4-6 hours or until the chicken is cooked through and tender.
  2. If using chicken breasts, check for doneness after 4 hours.
Shred Chicken
  1. Once cooked, use two forks to shred the chicken right in the slow cooker.
  2. Stir everything together to combine all the flavors.

Notes

For extra smokiness, try adding more smoked paprika or chopped chipotle peppers. Increase chili powder or use hot sauce for a spicy kick. Use frozen corn for convenience or fresh corn for a sweeter taste. Season the chicken well for maximum flavor. Feel free to add other vegetables like bell peppers or onions.
