Swiss Bacon Mushroom Meatloaf

A delicious twist on a classic dish, combining juicy ground beef with Swiss cheese, crispy bacon, and earthy mushrooms.

Ingredients
  

Meat and Dairy
  • 2 lbs ground beef (80/20 preferred) For juiciness
  • 1 cup shredded Swiss cheese Divided into two portions
  • 2 large eggs
Vegetables and Flavorings
  • 1 small onion, finely diced
  • 2 cloves garlic, minced
  • 1 cup mushrooms, sliced and sautéed
  • 1 cup cooked bacon, chopped Cook bacon until crispy
  • 2 tbsp Worcestershire sauce
Baking Additives
  • 1/2 cup breadcrumbs

Method
 

Preparation
  1. Preheat the oven to 375°F (190°C) and line a baking sheet with foil (or use a loaf pan).
  2. Cook the bacon until crispy; set aside.
  3. Sauté the mushrooms in the bacon fat until browned.
Mix & Shape
  1. In a large bowl, combine the ground beef, eggs, breadcrumbs, onion, garlic, Worcestershire sauce, salt, and pepper.
  2. Mix in half of the shredded Swiss cheese gently.
  3. Shape into a loaf and place on the prepared baking sheet.
  4. Top with the remaining cheese, mushrooms, and bacon.
Bake & Serve
  1. Bake for 45–55 minutes, or until the internal temperature reaches 160°F (71°C).
  2. Let rest for 10 minutes before slicing.
  3. Garnish with parsley and serve warm.

Notes

Let the meatloaf rest before slicing to help it keep its shape. Store leftovers in an airtight container in the fridge for up to three days. Can be frozen for up to three months.
