Ingredients
  

Main Ingredients
  • 1 pound ground beef or turkey Choose lean meat for a healthier option.
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (15 oz) corn, drained Frozen corn can also be used.
  • 1 can (14 oz) diced tomatoes
  • 1 can (10 oz) diced tomatoes with green chilies Can be replaced with plain diced tomatoes for a milder taste.
  • 1 packet taco seasoning Adjust spice level to taste.
  • 1 cup beef or chicken broth For a vegetarian option, use vegetable broth.
  • 1 medium onion, diced
  • 1 medium bell pepper, diced Feel free to use any color.
  • Salt and pepper to taste

Method
 

Cook the Meat & Vegetables
  1. In a large pot or Dutch oven, brown the ground beef or turkey over medium heat until cooked through. Drain excess fat.
  2. Add diced onion and bell pepper, cooking for about 5 minutes, until softened.
Add Seasoning & Ingredients
  1. Stir in the taco seasoning to coat the mixture evenly.
  2. Add black beans, kidney beans, corn, diced tomatoes, and broth, mixing well to combine.
Simmer & Serve
  1. Bring to a boil, then reduce the heat and simmer for 15–20 minutes to let the flavors meld.
  2. Season with salt and pepper to taste, and serve hot with toppings like cheese, sour cream, or avocado.

Notes

Leftover Taco Soup can be stored in an airtight container in the refrigerator for up to 3 days, or frozen for up to 3 months. Customize with extra vegetables or use different types of beans.
